We had a special meal called a Pachamanca which was cooked with hot rocks which was buried underground with the food to be cooked. The menu included Cuy (guinea pig) which I though tasted awful. Interesting experience

I was still very new to Peruvian cuisine and my waiter - Victor and his staff helped me select Trout Ceviche which was very fresh. We sat outside overlook the courtyard - excellent service.
