We are very glad that we took up Shingo 's suggestion for a private dining experience when we reserved our stay at Iori Takayama, a traditional Japanese home. The team was very hospitable and made us feel at home immediately. At the private dinner, Chef...Shigene's skills and presentation was exquisite. The best A5 beef, sashimi and sushi that we have tasted. We must praise too the Chef's traditional japanese breakfast that he prepared for us the next morning. Enhancing the whole experience was Shingo's introduction of every food course and different sake which kept us engaged the whole evening. We learnt alot that day. Shingo is a generous home-owner who is committed to share his culture with visitors. Overall an experience not to be missed when you visit Takayama!More
We had the very special private Kaiseki Dinner while staying in the beautiful Iori Shiroyama in Takayama. The Chef Chigene and his crew prepared the food in our house and took perfectly care of us. We learned a lot about the delicious food they served...us, giving us a wonderful culinary and cultural experience in a very private atmosphere. We can highly recommend the private Kaiseki Dinner with Private Dining 114. It was absolutly worth every Yen - and a very special highlight of our trip to Japan!More
While in Takayama ( the best ever Airbnb Iori Tenman) they included breakfast from this chef and suggested dinner, by him and his team. Everything was very tasty, great saki accompanied it and a wonderful experience 🙏
During our stay in a traditional Japanese home (a "machiya"), the owner, Shingo Matsuba, arranged for a traditional Kaiseki dinner experience that was prepared and served to us in the machiya by a master chef, Shigene Sumitake, whose family has had restaurants in Takayama for...12 generations (Chef Shigene had served Kaiseki to VIPs in Kyoto for more than 4Xs the cost of this experience). I lost track of how many courses we had; it began with a traditional tea ceremony. Shingo explained every dish and the different sakis we tried (the area is known for its excellent saki) in flawless English. I have never had better sashimi in my life, and the Hida beef was a revelation. Chef Shigene came out of the kitchen at one point to make sushi for us, table side. The food was served on the chef's personal collection of plates and bowls, many of which were unusual; all were beautiful (especially the soup bowl and lid!). This is an unusual, extraordinary and unforgettable dining opportunity - the best of 10 days of experimenting with regional foods in Japan. Even my somewhat fussy-eater 16-year-old tried everything and came away happy. Do not pass this up!More
We had a private Kaiseki Dinner organised at our home at the Lorii Stay. Our host Shingo, the amazing Chef Shigene and his wife Mina took superbe care of us and introduced us to the finer art of Japanese food and Sake. This was really...a fantastic dinner and we can highly recommend this.More

This was an unforgetable experience, perfectly prepared & presented food, excellent hospitality & explaination of the traditional ingredients & dishes, all in the atmosphere of a traditional Japanese home. It was absolutly one of the highlights of our trip to Japan & we will certainly...visit this region (& hopefully sample the food) again when we return to Japan for another trip.
