We highly recommend to stop in Quadrado for a street food tapioca made with love. The best we had ever had!

Elma’s really have the edge when it comes to creatively crafting the local ‘tapiocas’ as nobody else had ever dared to make’em. Exquisite ingredients’ combinations, in very juicy, well-served rolls will positively surprise you. Don’t miss the sweet ones either.

This is not a restaurant, but more an option for a street side snack instead of a full meal or the sweet tapiocas as alternative for a dessert after having your meal at a restaurant. Delicious tapiocas. Very, very generous with the fillings. Brisk business with a constant coming and going of clients, locals and tourists, on an otherwise slow Sunday evening in low season Trancoso.

Staff served us a RAW pastel, when we complained they wouldn’t change it or give us a refund. Incredibly rude. When the second one came out we showed them the obvious difference between the two, they still said ‘that’s too bad’ DISGUSTING behaviour and money grabbing. The acarajé have ZERO flavour and was so disappointing. AVOID

There is a reason why Elmas is rated number one in Trancoso. It is hands down the tastiest food we had in town!

Tapioca da Ema is a small tapioca stand that opens in the evenings at the entrance of the historical square of Trancoso. You can hardly miss it because there is always a crowd in front of it. The crowd sais it. The tapioca server at the stand is one of the best I have eaten in Brazil. The historical square of Trancoso has many good and fancy restaurants. These type of restaurants you can find in other places but the tapioca from Ema is special. Don't get me wrong. There are tapioca stands in almost every Brazilian city but very few compare with the tapioca from Ema.

I love Elma’s tapioca. It is big and delicious. But she is getting famous...lol.. and now is more expensive. My favorite is cheese flavour! Miss it!

We had Pato e Dany tapioca and the portion was well served and enough for a quick meal. Moreover, the price (R$ 15) is fair compared with the average price at Quadrado. Heineken long neck bottles at R$ 10 and extremely chilled. Highly recommended for a quick meal/ quick stop.

Ate many tapiocas here, and have to concede that they are the best I tried on Trancoso - sorry Sandra. The fillings are varied and generous, and the tapioca is cooked perfectly. I recommend the chicken with cheese, tomato and pineapple chutney - very more-ish.

Ordered a single tapioca with Nutella and was charged 20R$! I thought this was very expensive and felt taken advantage of as I didn’t speak Portuguese. Not a good first impression of Trancoso. It did taste good though.

Elma e Jide took the tapioca and acaraje to the world of high gastronomy. There is the only place in the world where you can have one tapioca and acaraje with service of 3 star

If you're looking to have a great *tapioca* you just found the spot! They are generously filled and the dough so crunchy that you might want to have another one. I recommend to have one savory each and split the sweet as a desert. The staff is very friendly since the girls who make them until the boys who charge you. I am vegan and they even make a special for me every time I go. Warning, it gets addictive! :)

We couldn't get enough of these. They have a great selection but we found ourselves drawn more to the savoury ones. Crunchy, crew, savoury and delicious. All for 10rs. Definitely try them.

There are three local women who run these street food stalls most days from 3pm until late, at the entrance to Trancoso's lovely Quadrado opposite to the church of Sao Joao Batista. They serve a typical Bahian dish of tapioca flour fried until it resembles a pancake (but without flour, egg or milk), then filled with a variety of lovely things. Savoury options include carne seca (sun-dried beef), cheese, aubergine purée and green herbs. Sweet versions include fried banana, cinnamon and condensed milk or Nutella. These are all prepared to an excellent standard of hygiene, are excellent value and should not be missed during any visit to Trancoso. I loved every version I tried!

They sell street food of Bahia. they are made very cleanly, it taste great! lovely. As usual I tried Acaraje with okra and tapioca. Must visit place in Trancoso
