Little corner café downtown on Main St. Typical décor. The food and desserts are great!! Should try the coconut scone, baked just right, and not too sweet. I like their iced teas. There is always a special and a fruity tea. .

This cute little place is located in downtown and is easy to get to off I25. The staff were friendly and helpful when asked for suggestions. The coffee was smooth. We had lunch here; they offer sandwiches, burritos, quiche and baked goods. Both entrees we had were delicious. You order at the counter and they bring the food to you.... More

Always fresh roasted coffees, with quick meals & desserts to go along with each beverage. Both indoor & outdoor dining area. Family friendly spot. (Beverages like hot chocolate for the kids.) Reasonably priced. Good service & friendly staff.

We stopped in at this just-off-the-highway spot on a drive home from a camping trip, and were pleasantly surprised by how nicely 'downtown' the location felt. Solar Roast is notable for several reasons. They actually do sun-roast their coffee on the roof of the building. Food is healthy and inexpensive, and somehow they have managed to find help (young ladies) who are always upbeat, courteous, and efficient. No barristers with elitist attitudes (as in some coffee houses), but just plain nice, pleasant people to wait on... More

When we drove into Pueblo from the Interstate we thought the town had died. There were very few people about despite it being lunchtime on a Friday and many of the shops were vacant or closed. We drove past Solar Roast twice before realising it was there and we were pleased to find a café that served its own coffee... More

In all my visits to Pueblo I'd never seen this place. It is very easy to miss. I ordered a peppermint latte and it was tasty. The staff was friendly. They have nice seating inside & tables outside. While they made my drink I saw food at tables that looked really good. I'll be back and do breakfast next trip.

This is a local spot and easy to miss. It is filled with regulars and first time visitors the same. The coffee is fresh, roasted on site through solar power, and wins awards after awards. The food is fresh and large portions.
