Stopped by here without a reservation. I was given a rough quote of 45 minutes, but it ended up being about 2 hours. So I would definitely say get a reservation if you don't want to wait. My visit to The Aviary was inspired by 1st Look, a television show with host Ashley Roberts. In person the restaurant atmosphere and cocktails surpassed my expectations. Did the 3-course cocktails tasting and I must say, every cocktail was a Pandora box. Absolutely Grant Archatz's style as each individual cocktail definitely exudes its individual elements of surprise. First the location is in the hip west loop gourmet area. There is no sign just a man with a clipboard. We were lucky to be accommodated quickly without a reservation (likely bc the crowds were caught up in baseball that night). We had a fantastic evening, full of surprises and delights. The service is stellar, with clear explanations and instructions, without being overbearing or twee. Very eclectic, glad we got to check it out. Known for their craft cocktails, they did not disappoint. Ask to visit the "Office", which is a hidden bar in the basement (unmarked, behind a locked entrance).

This was my second visit and I am still very impressed. Amazing cocktails, not only by the composition of the ingredients but also by the unusual way they are served. Three of us went here recently while on a work trip (was highly recommended from a colleague). Make sure you have a reservation-it's difficult to get in even during the week.
