I'm missing Mexican Inn/Taco Trader soft cheese tacos horribly! I grew up with their food. Does anyone have a good copycat recipe? It's looking like they are not re-opening.

One of my favorite places to stop for lunch. Great pork tacos. If you are looking to try something different, order their "Steak Taco Fries". Delicious!
