Eclectic mix of foods fusing Tex-Mex and Caribbean. The stacked enchiladas are my favorite, but I don't think you can go wrong.

One of the hot spots in town. The quality of the food and service totally depends on your luck and the day of the week. If you see it busy, just one word: stay away and eat somewhere else. We have been here more than couple of times. Initially we enjoyed dining here, however most recent experiences were not quite... More

We like Bolos. Food is ALWAYS good and usually very creative. Can be a little loud. Not a college place like most of Aggieville. Drinks are well made. Staff is friendly. Recommended.
Wife, daughter and I visited for dinner. This restaurant is in Aggieville across from the Kansas State University campus. We didn't have to wait for a table but it was during Christmas break. My daughter enjoyed the cheese pizza. My wife enjoyed the Coco Bolo burrito. I ordered the steak - this night it was a KC Strip - and... More
We finally stopped at Coco Bolos after seeing it for years on our visits to Manhattan. It gets great reviews on other sites, so we went in pretty excited. We got seated and got our waters right away. Took a bit for the server to come back and get our order. Took even longer to get our chips and queso,... More
I was kind of leery of the non traditional Mexican menu but thought it we try it any way. I ordered the Captain Jimmy's seafood tacos and they were great. I had one shrimp and one mahi mahi. The jalapeño coleslaw topping was super. The black beans and rice were great too. I will definitely eat here again. Lots of... More
Very nice outside, covered patio. Great food and drink. Staff is always friendly and courteous. Have never eaten anything there that wasn't wonderful. Great for a date, great for a family, great for everyone.
Great thing about this place is that it's located on a quiet street apart from noisy bar/restaurant area of Manhattan just a block away. Fast friendly service, reasonable prices, good food and generous portions, and their margaritas are just great!
