I had sampled some of the Underground Butchers cured meats the previous evening at Sardine on the charcuterie plate. I knew I would be close the following day and it was worth going a little out of the way. My aunt and I stopped in this hip butcher shop for some meat after getting a load of fab veggies at the farmer's market on the square. My headline says it all. These are the best sandwiches in town, bar none. (The only possible exception is the vegetarian Reuben at Stalzy's.) The bread, the meat, the condiments -- yum! Great cuts. Lots of good cheeses and sausages if you are trying to put together a killer charcuterie platter. Neat variety of other high end classy looking products such as quail eggs. I had a monte cristo sandwich for lunch - take out, as there is no where to sit in this store. The smoked ham was very smokey and bread was good, but so much fat on the ham it made me gag.

We stopped at the Underground Butcher because our friend Todd Moore's aged meats are sold at the shop. We had no idea this little gem would be so stocked with treats: jars, knives, seltzers, olives, coconut balls, gorgeous meats and sausages, Ruby coffees, jams, mustards. This place is on the expensive side, however, I love their home made hard sausages. I stop in here whenever I'm in town to see what they have!

We were lucky enough to get one and half pounds of top sirloin steak. Took it home that night and grilled it to a medium perfection. You can taste the difference in locally sourced meat. This is an excellent specialty butcher shop that sources its meats to the excellent French cafe next door. We bought brats that were meaty and not at all greasy as well as homemade parmesan chips and Italian sausage. They had a great selection and I highly recommend this business.
