We first came in 2016 and it was magical. Seated in the wonderful lodge and offered a pre dinner drink from a superb list of vintage champagne. Then moved into an incredibly romantic side room, served wonderful food including sweet meats, paired with stunning wine...and left very happy. I’m so sad it didn’t repeat this time. We were ushered straight to our table and left waiting for some time until we were offered water for the table and a drink. As others have commented, non vintage (good but not €50 a glass?!) we opted for the 5 course surprise. the best dish was the raclette souffle amouse bouche. the rest was rather unremarkable and dare I say the cheaper menu options. Wine pairings did not stand out, bar the riesling. The pairing with the steak was particularly poor - a young fruit forward red better suited to game. And to end, the coffee was dreadful and sadly we did not enjoy the petits fours. I wonder if the cost challenges of haute cuisine, post covid debts and inflation have started to bite. Wish them all the best and hope to see this beautiful spot back to its peak in future. In the mean time, recommend visitors go for a la carte rather than the tasting menu.More

This is my 2nd time at this restaurant. The last being a brunch menu. I was excited to compare with the dinner service / menu. I was very happy with experience! Service, while lacking in coordination at times, was excellent! There is just an abundance...of people taking care of you 100% of the time. The menu. 5 surprises and wine pairing, was simply perfect, of course. The meal included adjustments based on my dos don'ts. Truly a fun and amazing experience. We closed the place down and missed the opportunity to thank the chef... Merci Chef!More

A friend hurt himself on the slopes after a ski accident so we thought we’d go for lunch to soften the blow. We have been skiing in St Martin for 20 years and have driven past the restaurant many times saying we should go. Anyway...today we did. Before I comment, I have been lucky enough to go to many beautiful Michelin restaurants. We ordered the 5 dish set menu. By the time we had finished , I’m not sure how many courses we had as they just kept on coming. As regards what was served, it was utterly stunning. I have eaten at Gavroche for 25 years (which I love) and the food served was simply awesome. Oysters, sweetbread, asparagus, a fish 🐠 I can’t remember. ….. everything was lovely I love eating and drinking in a restaurant with a passion for both and this place simply sang. In short, one of the best lunches I have ever had and all I can say is that it was simply excellent. . Yes it is expensive but the biggest compliment I can give this restaurant is that it is well worth it. 5 stars all the way. Service was also excellent with enthusiastic young staff delivering a service to rival London’s best. One comment. The wine list is a thing of beauty but the pricing is hit and miss. The pricing is a bit expensive but with some well priced wines. If you know what you are doing then you can have some lovely wine at a good price but I’d prefer if the pricing was reduced a little so all can enjoy what is a lovely wine list. As regards our lunch, 5 stars. It was simply stunning and the owner came to say hello at the end of the meal: an Arsenal fan - we all have our issues😂 Food with love, integrity and passion and I am a conservative judge. Simply lovely. I hope others have the same experience and well done to all involved as I’m not easily pleased.More

Incredible food (a special vegetarian menu for one of my family was prepared), attentive, professional and friendly staff, the location, a wonderful room with incredible views......I could go on. I spent my time here "on a cloud" and would very much recommend to anyone. Absolute luxury but firmly keeping to its mountain roots. We wanted to visit La Bouitte for many months and the opportunity finally came up, we were so excited. We really loved the place. Beautiful hotel that looks like a chalet, and the restaurant is very traditional in its looking, it is so warm and...comfortable, it almost feels like home. We decided to go for the discovery menu in 5 services. What was really fun is that the chef decides what to cook for each table, based on the 'à la carte" classics. So we did not have the same dishes as our table neighbors, the night was full of surprises. What we had that night was simply delicious (oysters, revisited raclette, asparagus with truffles, black truffles, Fera fish, sweetbread), all dishes were super refined and tasty. Worth the 3 stars without a doubt. Service was on point as well, and we were happy to meet the Chef René and his spouse who is carefully looking after her guests. One very bad point however: the wine prices. Pricing was absolutely HORRIFIC and by very far the highest I have seen in my entire life. They have such a great cellar but everything is just out of reach. I pity the young sommelier who was full of life and very chatty, as he must sincerely never open great bottles. Be ready to pay a bottle of Krug Champagne about 2000€. I have never seen a higher price than 600/700€ in the greatest restaurants on earth, like in New York, Tokyo, or Hong Kong. I cannot understand the price positionning that absolutely ruined the experience, being a wine lover myself and considering that food and wine can only exist together. Too bad... started from nothing in 1976 and now seriously chasing the €€€!More

My wife and I recently had a 5 course tasting menu here, accompanied by the wine pairings. The food was incredibly rich, as one might expect in a Michelin 3 star restaurant. However, the wine pairings were very poor. All but one were very young...(2018, two 2019 and a 2020), most were local and all but one retail at less than €30 a bottle. For 5 small glasses of these uninspiring wines we were charged €150 each plus an additional €45 each for a glass of non vintage champagne. The total bill was over €970, which I personally believe is totally unacceptable for a meal accompanied by extremely average wines. As an aside, we were both unwell the next day, so much so that my wife was unable to eat again for over 24 hours following a bad case of nausea and diarrhoea in the following morning.More

I've never been to a 3 Michelin star restaurant before and was frankly surprised when we got a reservation during our ski trip to Val Thorens. Not knowing what to expect but with anticipation high, we arrived. We were courteously greeted and brought to a...wonderful table by a window, sat and the discovery began. From the amuse bouche to the final crumb of dessert, we experienced genuine culinary mastery at work. The breads were freshly baked, tasty and a lot of variety. Such was the taste and subtle aroma and warmth, that I remained concerned we would over eat just the bread alone. The starters of baby vegetables cooked gently in their own juices and a ravioli in an onion broth, were revelations. Just the broth was so subtle yet so flavourful that I could have made a meal of bread and broth. The mains, 3 kinds of fish and a beef continued to dazzle. The fish had obviously swam from the nearby lake right on to my plate; fresh, precisely cooked, subtly seasoned it was a maoist, delicate, flaky sensation. The aged beef, required no utensils or actual chewing to be enjoyed and swallowed. I am usually not a fan of desserts but tried each one from my companions' orders and found them delectable. A final flourish were these small "macaroons" which were said to have a saffron centre. There were four of them, presumably one for each of us, I had the lot. The wine list was two leather bound books which read like a wine lover's bible. The service was gracious and unhurried. At last the recital came to an end and we left both titillated and satiated.More

When you decide to choose a three stars Michelin restaurant, you're pretty sure to have a memorable experience but sometimes, it's a little pretentious and sophisticated. It really depends of the vision of the chef(s). At La Bouitte, René and Maxime Meilleur, father and son,...have distilled the essence of excellence, cooking food with heart and a real passion for the best local products. Their cuisine is the most beautiful hymn to the Savoyard terroir. Magnificient fishes from the Leman lake, exceptional meats from the surrounding farms, divine herbs and berries from the mountains (Maxime loves to go and harvest herbs which is a source of inspiration of what they will cook for day lunch and dinner)... When René and his wife started 44 years ago, La Bouitte was just a restaurant of local mountain style specialties for hungry skiers but they had done it well and their little restaurant was pretty successful. One day when they went to Paul Bocuse in Collonges au Mt d'Or to treat themselves in between two seasons, René had a kind of revelation and decided to turn his restaurant into a gastronomic one. Soon joined by their son Maxime, they started to climb little by little the culinary peaks to finally reach the highest point in 2015 with three amazing Michelin stars. The three stars reward a hard work of many years and after our recent dinner at La Bouitte, I understand how much it is well deserved. We definitively had one of our best dinner ever and at each dish, we had an emotion. Their cuisine tells a story and got this simple complexity which is a sign of an outstanding food interpretation. Each dish we had the honor to taste was absolutely magical creating at each bite, something just inexplicable but so enjoyable. The menu is pretty interesting because all set courses menus are a surprise and you just pick from an extensive list of products and ingredients, all from Savoy, the ones you're not too into and then, the chefs create a unique menu in 3, 4, 5 or 8 acts. We opted for the 4 surprises plus all the little ones making of this incredibly affordable 3 stars dinner, already a real feast. Everything we tried was sensational... starting with excellent mise en bouches before the first starter which was a "little garden of vegetables with a citrus vinaigrette and double cream from Gruyère". This dish was like a gourmet dream with young vegetables cooked to perfection, a little sour sauce to punch the dish and the softness of this delicious cream. So savory and totally well balanced. Then was langoustines (yes a special request because usually Maxime and René don't cook this crustacean and they usually prefer local river crayfish but since I've sent them an email weeks prior visit, they managed to find langoustines to please us...) and this second starter combined with a spelt risotto and the softly and intense sauce was an other grace-filled moment. The main course was maybe the most amazing moment like reaching the Nirvana... a amazingly cooked and with an incredible melting texture arctic char associated with crispy skin filled with secret aromates and ingredients and a velvety sauce made with wine from savoy. We've been in numerous 3 stars but this dish will remain for ever the most sensational. As an end, a very refreshing beer like made with Mirabelle (little yellow plum...) before a raspberry soufflé simply perfect, not too sweet and seasoned with mountain herbs and flowers and escorted with little sweet bites all as delicious as the others and more specifically these legendary Biscuirons... a dinner to remember... and I prefer not to talk about breads and cheese trolleys because it would be obscene since it was a true sin of greed... (or delicacy I prefer this word...). Service was extremely well done, impressively kind and smily and was attentive at the littlest details. Waiters and Maitre d'hôtel were so adorable, not snobbish at all to make guests just like at home and at each dish served, they had a little story to explain. One of the most remarkable service we experienced. Finally, a nice dinner wouldn't be perfect without a good wine and the wine list of La Bouitte is like an encyclopedia, maybe a little pricey, but with the best Grand Cru bottles and a very interesting selection of local wines. We had a crispy and refreshing Apremont which was perfect match with our dinner. So yes, La Bouitte is an incredible 3 stars Michelin and this simplicity propels to the top René and Maxime, artisans and artists, who have as a unique objective to please their guests and make them having an unparalleled culinary emotion...More

We have quite a number of "stars" mileage..., including many of them coming by 3... and of course most of these experiences were between very fine and superlative. However no all resist the retrospective analysis... Here with our dinner at La Bouitte, we are clearly...close to the very best, the kind that will make a very long and lasting impression. Firstly, the cuisine of course: an interesting mix of extremely sophisticated preparation and (mostly) simple and local products... seasonality, quality, hard work... that makes miracles (like this fantastic starter of simple vegetables....); service then: formal, friendly, not pretentious, everything you'd expect... and last but not least, the welcome of the Meilleur family.... humility, friendliness and professionalism at their best. Wonderful wine list, excellent bread (and butters), and so on. Expensive of course, but nothing scandalous. We'll be back as soon as we can!More

We were chosing between the one in Courchevel with three Michelin stars and La Bouitte and ended up reserving a table at La Bouitte. We had a lovely dinner experience, having chosen the four surprises. All of the courses were delicious, beautifully presented, breads and...butters great as well. They ask you before you order the surprises as to your dietary limitations, we have none but I recommend mentioning if you mind smoked flavour like I do. But again, that's just me, the rest was amazing. The staff was extremely pleasant and helpful, I chose the wine pairings and they were great, all French and all white - I appreciated Burgundy Chardonnay pairing with sweetbread. I really enjoyed the fish with arugula - the fish had wonderful buttery and nut taste and arugula had fried capers as a flavouring which made a spicy punch without the traditional acidity of capers. The whole dinner service was wonderfully paced with amazing staff and a knowledgeable sommelier, all of the details were great, nothing to complain about. I really enjoyed the combination of haute cuisine in the rustic Savoy style with heart and sould poured into the meals themselves. There are top-rates restaurants that are a mere gimmick, this is a genuine thing. Do book, it's so much worth it! Also, the small desert section was extraordinary :)More
