You take Italian trains from Manarola to Ventimiglia, then change to a local French train to Nice. You would have to change trains in Italy, but the place where you change depends on the time of your journey.

See www.trenitalia.com clicking on the UK flag to change to English.

Some of the options Manarola - Ventimiglia require reservation, so check carefully.

You probably cannot buy one ticket for the whole journey.

The French trains from Ventimiglia (Vintemille in French) are local trains so there are no reservations etc. Buy your ticket when you arrive there. Those trains run every 30 to 60 minutes. Last trains are early in the evening except at weekends thus:

You can buy your French ticket from Ventimiglia to Nice at staffed stations in Italy, e.g. Monterosso, la Spezia, in Genoa or Ventimiglia, but not at Manarola which is unstaffed. The ticket costs €7.10 and is OK on any train as these trains have no reserved seats. Validate before using.

There is one direct train from Manarola to Ventimiglia - but at 4..42 in the morning. It takes five hours, has no refreshment facilities, and calls at nearly 50 stations. To see fares of journeys entirely by Regional trains, use a date less than seven days ahead on the Trenitlia website, and buy Regional tickets in Italy.

The most comfortable journeys are probably those with just one change of train at Genova Piazza Principe onto an Intercity train with reserved seats and a rolling refreshment cart. But at many times of day an additional change is required to reach Genova. The Trenitalia website tells you where to change trains if you enter Manarola to Ventimiglia. You must also enter your 'hour' of departure on the website - enter '4' for 04.00 to see all connections.
