Not exactly half way, but by far the most interesting place - actually worth more than just a brief stop - would be Sevilla, great cathedral, old city centre with cobbles, tons of ancient churches and lots of great food.

Pretty much half way would be the border town of Huelva. Not been there but I understand it too has some charm.

Definitely Sevilla. Fantastic City. I'm not religious but the Cathedral there is a must see for sure. Parking is not easy though. It's a boring stretch to the Portugal border from Sevilla and we have not stayed Huelva but if you want to do a very long drive first from Cordoba and make it to Portugal, Tavira is the place to stay.
