We enjoy Ca Bianca in Santa Rosa- restored Victorian with good food and pleasant atmosphere. Their focus is Italian.
I DON'T recommend the restaurant at the Hyatt Vineyard Creek ( I think its The Brasserie) in Santa Rosa.
Can't do "3 only"!! But you can research from this list to determine which ones best match your tastes/desires/scheduling:
Santa Rosa: Zazu (western outskirts), Bistro 29 (D/T), John Ash & Co. (northern outskirts), Syrah (Railroad Sq.), Jackson's Bar & Oven (Railroad Sq.), Tony & Jack's (Railroad Sq.), Willi's Wine Bar (northern outskirts).
Healdsburg: Zin, Cena Luna, Dry Creek Kitchen, Barndiva, Willi's Seafood and Raw Bar, Bistro Ralph, Madrona Manor. Very sadly, the great Manzanita has closed.
Windsor: Bistro M, Mirepoix (fixed-price multi-course dinners)
Forestville: Farmhouse Inn, Mosaic, Corks @ Russian River Vineyards
Glen Ellen: Glen Ellen Inn's Oyster Grill and Martini Bar, Saffron. Also, Wolf House has reopened but I haven't dined there recently--a friend says it's still very good.
Kenwood: Kenwood Restaurant, Doce Lunas (eclectic, casual, good for lunch too), Cafe Citti (gourmet deli--you can pick up or eat there).
Jack & Tony's not "Tony & Jack's" in Santa Rosa's RR Square!
Dry Creek Kitchen in Healdsburg is a must, and any of the Stark restaurants, which include Willi's Seafood in Healdsburg, Willi's Winebar and Stark's Steakhouse, both in Santa Rosa. Other possibilities are Farmhouse or Applewood, in the Russian River area. Mirepooix in Windsor is another great option.

For fine dining in Santa Rosa I really like Zazu's and Syrah. My father knows the chef at both, so I am a bit spoiled from them.
For a good mid ranged I like Flavors in courtyard square.
Another vote for Zazu http://www.zazurestaurant.com/ We had a delicious dinner and thoroughly enjoyed our waitress - just a wonderful experience all around. I would suggest reservations - probably a good idea wherever you decide to go!
