Check out negrilonestop.com which offers several of the better resorts in Negril. They do not sell the RIU resorts or Beaches.

As far as fishing adventures, talk to one of the numerous glass bottom boat operators along the beach and work out a deal.

Treehouse on the beach is a good choice----I saw a Groupon for them recently--may still be active.....

Would look at Coco La Palm or maybe the Grand Pineapple.

I took my kids (now adults) to Jamaica several times and they always had a blast wherever we stayed, but the places they enjoyed the most, besides Beaches, were Crystal Waters Villas and CocoLaPalm. Crystal Waters has separate cottages on or near the beach. We bought our own groceries and the ladies there prepared it. All excellent meals. Coco is located on the beach and has 2 pools and a hot tub, and they also have a good restaurant. Other places to check out would be Rondel Village and Nirvana, both kid friendly. Like BP said, there are several boat operators along the beach that you could talk to about fishing/snorkeling trips.
