If you want to see a catboat "in action," the North Side Heritage Days (during Pirates Week) always features catboat sailing:

Another opportunity to see catboats in action: the Annual Cayman Catboat Club Easter Regatta, held on one of the days over Easter long weekend, usually Easter Saturday or Easter Monday (which is also a Public Holiday in Cayman, along with Good Friday).
