Is this the place you mean? http://www.gingerbreadcabin.com/ It looks really nice, however, be aware that it is not in the town of Jasper, nor in the park - it's in a tiny rural subdivision called Folding Mountain, which is located just off highway 16, just outside the east entry to the national park. It's about a 40 minute drive to town. It's closer to the town of Hinton (about 15 - 20 minutes away).

Some visitors like to stay out at Folding Mountain (also called Jasper East) for a more rural experience, but there is no dining or other visitor services - it's purely a residential subdivision. The Overlander Lodge is located on the highway nearby, and they have a restaurant on site. If you stay there, you will be doing extra driving every day, to get to and from your accommodation to the sights and attractions in the park; it is really scenic driving, however, and there's often wildlife along the highway (bighorn sheep in a few spots, moose near Folding Mountain).

Note also that this is not the same place as the Gingerbread House, which is a private home accommodation in town. Their reviews are here: tripadvisor.ca/Hotel_Review-g154918-d1853449…

The people who own The Gingerbread Cabin also have a private home accommodation apartment in town, called "Bear Cub Lodging" - it's a 2 bedroom suite, I believe. You can find it, and many others, listed at www.stayinjasper.com .
