I was surprised that the YVR website doesn't give this information..they have tons of stuff on there plus all the restaurant listings etc but no operating hours!
Unless someone comes along soon with an answer I'd suggest doing an email to the yvr site.. I needed to contact them about something last spring and they answered immediately. Would love to be of more help. I do know that when I've come in on late flights you walk above part of the international area and at midnight it pretty much looks to be shut down.
International after security is a ghost town after midnight. The only bar is to the left of security and the opposite direction of most flights. It closes about 1AM. Shops are closed and there is an open coffee bar. A thought is go to the Plaza Lounge (see it at yvr.ca). It is a lounge you pay something like $35 for all the amenities of an airline business lounge. They list a phone number at yvr.ca to get hours etc.
I think the idea of going to the casino is brilliant. You would have to leave the airport, take Canada Line 3 stops to Bridgeport and River Rock Casino is right there. You would have to go through security on the way back to catch your HK flight though.
We had no stores or restaurants open when we were waiting for that flight. If you have your boarding pass before you arrive and your luggage is checked through then you should be able to go to the River Rock Casino and get some food there. Their food is not bad. Just make sure you are back at the airport in time to go through security and all that hassle.

Really if you land at 10:30 and are off the plane at 10:45 or so, then if you walk to the Canadaline and wait for the train, take it to the River Rock you will get there at best around 11:15. This gives you about 1hr or so before you have to head back to the airport. While that is enough time to grab some food, you may think it is not worth it as your time zone will be 3 hours ahead in your body's time. If it was me, I would exit out of the domestic area and go up stairs where there is a food court to get food or check out the bar area at the Fairmont hotel (in airport) which should still be serving something before midnight, then just grab a seat and hang out for awhile.
I'm guessing the OP is flying with Air Canada so the luggage should already be checked through. If you do take the train to either the Casino or Richmond just be aware that after 11PM the frequency of the trains to the airport drops to every 20 minutes so it might make sense to take a taxi back.
Yes I will be flying on AC017 to Hong Kong. As long the food court is still open til 00:00hr then I'm ok. Thanks for the advice all
