In order: Le Soleil with St Regis and Delta tied at #2. They are all within minutes by foot of each other with St Regis closest to shopping and transit (including airport subway). Le Soleil is the newest and swankiest on a quiet business street. It is a purpose built boutique hotel with access to pool and fitness next door. St Regis is a small room century old hotel refurbished a few years ago. It has fitness access next door. Its street is due for a tidy-up of some run-down buildings so it doesn't have the good feel that Le Soleil has. Not bad, just not as classy. Delta has the best first impression as you drive up, but inside it is a bit austere. It has its own fitness and bigger all suite rooms. Delta is good, steady and closest to the restaurant/bar area of Gastown. Any of the three will be totally fine.
