12 days in France mid-end July

We are travelling with our two children (11 and 12 years) and arrive in Paris July 18 and have booked 1 week at a small gite near Olonzac July 21-28. We leave Paris again August 1st. We'd like to spend a couple of nights in Paris (probably at the start of our trip) and then aren't sure what to do for another 2-3 nights after our gite stay.

Likely will take TGV from Paris to the south, but to which town? Montpellier, Toulouse or... then hire a car for our stay in the south. Are either of these places worth spending a couple of nights at the end of our week. Any recommendations? Perhaps somewhere close to the sea (but this isn't essential). Another village?

Our children love swimming, cycling (they aren't great in cities). We love good food and wine.

Narbonne would be the closest station to Olonzac. There are direct TGV's from Paris. Swimming and cycling in nearby Gruissan or Narbonne Plage.

Languedoc has good air, road and rail connections. However there are few bus services from the smaller places away from the autoroutes and rail stations. Olanzac is one place that would benefit from having a car.

I would take an early train to Nimes (2h 55mins), rent a car at the station, and drive to Olonzac. It is under 2 hrs but gives you the opportunity to see some of the Languedoc area - research lunch in Bouzigues and take the small roads from Narbonne to Olanzac.

From Olanzac by car you have the opportunity to easily make visits to the coast, Montpellier, Carcassonne, Toulouse, Perpignan, Spain, etc.

For the last couple of days research somewhere in the Nimes / Montpellier area. It has a different feel to Aude and is close to the car drop off. The coast will be busy and I'd think of staying a little inland and research places like Sommieres, Anduze or Uzes as a base. Visiting Montpellier is a must and it is best by train or car/tram (park at the Odysseum terminus near the A9 autoroute) .

You'll only have a couple of days in Paris at the start of your trip so a couple more at the end make sense to me... especially when you need to be in Paris the day before your flight leaves as traveling a long distance the day of your flight can be risky...
