By coach, probably - National Express or (part of the route) Megabus Change in London

But advance rail tickets, sufficiently far in advance, might be worth considering. Available from Weston as well as Bristol should you so choose. Also change in London. Will include tube transfer if needed

If you looked at trains and prepared to pay the little extra, train to Paddington, 205 bus (I think) or Circle line to St Pancras and get the high speed service from there, you may save money going on the slower train but if you want time to explore Cantenbury which is nice I'd say high speed train.

On long distance journeys the high speed train is normally the same price - no premium payable But yes - a good way to do it

If you can book a month in advance, possibly less, you can do the whole journey by train for as little as £18 at certain times of the day. And that includes the high speed train from St Pancras to Canterbury.

but these really cheap tickets are often non refundable and non exchangeable if your plans have to change.

National Express are having a sale at the moment. Up to 25% some routes, but terms and conditions apply, so suggest checking their website. You might need to buy split tickets for each leg of the journey.
