You have two choices. You can take the number 100 towards Elephant & Castle from stop Q in Wormwood Street (much nearer the junction with Bishopsgate than it looks on the spider map) to the junction of Blackfriars Road and Southwark Street. tfl.gov.uk/tfl/…liverpoolstreet-2161.pdf

You could take a 42 towards Denmark Hill or 78 towards Nunhead from Bishopsgate to Tower Hill (stop TE) and change there to the RV1, which travels along Southwark Street, and calls very near the Mercure City Bankside. tfl.gov.uk/tfl/…toweroflondon-2261.pdf tfl.gov.uk/tfl/…southwark-10324.pdf

In fact you have a 3rd choice. The 344 takes a more direct route than the 100 and the bus stop is across the road from Liverpool Street station on Bishopsgate. It is stop K on the link TP posted.

The 344 goes over Southwark Bridge and you will want the Souyhwark Street stop which will be announced. It's the second stop after the bridge but be careful as the bus may not stop at the first. Southwark street is the first on the right at the traffic lights and \the Mercure is about a minute's walk on the left.
