Does she have any particular interests ie musicals, opera, gardens, museums?

Is she from London? If so she could relive her youth in Carnaby Street, King's Road, clubs she used to go to and so forth. She was a teenager once and the rock n'roll never leaves you.

Is she into musicals? If yes Lion King is recommended. You could also have a girls shopping spree in Harrods?

Lion King is good, but not sure I would recommend it as a musical choice for a 60'er who I suspect will likely have somewhat more sophisticated taste...

The longest Champagne Bar in London is at St Pancras...

A normal river trip is always a good thing to do in London IMO, but just perhaps a fast Rib ride would be more thrilling for a birthday.... Depends if you are able to change your outfits afterwards, though!!

Maybe a "flight" on the London Eye?? You can get special Champagne packages for that...
