Can anyone recommend an interesting destination in the UK by train from Edinburgh?
This is like asking how long is a piece of string without you at least tell us how long for and what you consider to be interesting. Time of year and adults / children in party would also be useful.

There are 2,563 passenger railway stations on the Network Rail network. This does not include the London Underground, nor other systems which are not part of the national network, such as heritage railways.

If you could tell us where this fits into your plans it would be helpful. How are you getting to Edinburgh (how are you entering/leaving the UK?) and where at you going afterwards? Is this a return trip from Edinburgh and back, or do you wish to leave Edinburgh, go on to "an interesting place" and then go elsewhere (your departure point)?
Please be a bit more precise. Long distance or an hour away? Day trip or overnight? There are literally 100s of possible destinations.
