It is an easy city to walk about but wear comfy shoes as you will be doing a lot of walking. Have you considered the train? Parking in Edinburgh is not cheap. If you are going to the centre though you might consider the Onmi centre car park.

Train is a good idea as the station (Waverley) is right in the heart of things.

Unfortunately, would say to avoid Omni car park at the moment as Leith Street, right beside it, is closed due to the demolition of St James Centre and it could be a bit chaotic (certainly was when I was trying to get to the Playhouse from the other direction on Tuesday evening).

Anyway, would suggest using park and ride instead.

Definitely don't drive into the city centre, park & ride by bus or train from somewhere on the east of the city or even take the train all the way (it's a lot quicker). We don't have any arcades other than a subterranean centre by Waverley station but it's no tourist attraction!

if you're going to the Saturday farmer's market you need to be there early as a lot of stuff sells out fast. Also, it's mostly fresh produce so if you're going to be shopping for the rest of the day you might not want to be carrying fresh food round with you. There isn't an indoor market if you're meaning something like Grainger Market in Newcastle.

The 16, 22, 35, 36 buses all stop right next to Dock Place.

Depending on where you are starting from, the train is quicker and more convenient for travelling between Newcastle and Edinburgh.

Not Arcades and markets, but it sounds like you might enjoy pottering around the little shops around Victoria Street and the Grassmarket, or the upmarket charity shops (yes, that is a thing) in Stockbridge.
