What pubs should we plan on visiting

Trip Advisor's done all the work for you already. All you have to do is hit on a town to see ranked by category, ratings, votes and reviews the lists for hotels, b&bs, sites, and pubs. Additionally there are an amazing number of precise comments about why people voted however they did, both positively and negatively, as well as recommended fare and the like. A great resource.

In Dingle:

Best for trad music: John Benny's; Courthouse Bar; (the first two owned and run by musicians) Marina Inn, Flaherty's; Droiched Beag

Quirky: Dick Mack's (lots of tourists); Foxy John's, Curran's, Hannie Agnes's (the latter two frequented by locals)

I agree with pub suggestions so far, although we were in O'Flaherty's mid-May on a Friday night and were there at 10pm for 40 minutes and there was no music.

Kinvara just south of Galway City has a wonderful music pub called Connolly's. We walked there from our B&B down the street at 6pm on a Sunday mid-May and heard a wonderful music session. There were usually at least 10 at a time playing but someone at the bar told me that half of the people in the bar then were musicians, and a few were playing their instruments while sitting at their own tables in the bar.

Most pubs don't play until 9:30 at night so we really appreciated hearing some early evening music.

I think the ultimate at Connolly's was when it was very crowded and one more musician came in with his instrument -- a bass fiddle! He eventually squeezed through and joined the great music. You can "Like" Connolly's on Facebook for updates on their music.

If you're going to the banquet at Dunguaire Castle outside Kinvara (less than a mile walk), stop at Connolly's coming or going.

In Westport you can't go wrong with Matt Malloy's and Hoban's. There are other good pubs in town, some of them bound to have music, too.

Forget the West and South. Here's the Best Pub in the World [Lonely Planet] O'Tooles Harbour Bar in Bray just 14 miles south of Dublin and 35mins on the DART Train.
