What is the best castle/hotels to stay in Ireland?

We are planning a trip to Ireland and I'm interested in staying in a castle/hotel at least once. I've seen Dormoland Castle which looks wonderful. Any other suggestions that might be just as good or better?

If you opt to Visit Clifden Arts Week as per my answer on your other question then http://www.abbeyglen.ie/ is very handy for town. or www.ballynahinch-castle.com/connemara-hotel a few miles out.
