I think it depends on what you are interested in seeing. We traveled from Kilkenny to Kinsale and decided to go a bit off the beaten path. I'd read about the "scenic vee" through the mountains here on trip advisor, so I decided to plot that route for us. Using a road map and GPS, we got ourselves there, and managed to find several interesting places along the way that we hadn't necessarily planned on, we just happened to see them on the map or followed road signs. I'm linking the route that we took to get there- it was scenic and mostly off motorways which meant we got to see some interesting little towns.

Following this route, we first stopped just outside of Kilkenny at Nicholas Mosse Pottery - totally unplanned but saw the sign and stopped. Great pottery place in an old mill along the water. From there, we stopped at Jerpoint Abbey which was very interesting - no tour buses and very few tourists, but the tour guide was very knowledgeable. Continuing on, we stopped in Carrick au Suir at the Ormond Castle and again had the place to ourselves. Tour is included with admission and was well worth it. From there, we headed toward Clonmel, stopping at a "mall" that was recommended to us by the women working at the pottery place. We wanted to get some Irish sweaters. Can't remember the name of the shop but it was almost like a department store. Great selection and very good prices. I found some beautiful wool scarves there as well.

After Clonmel, we headed to the scenic fee which is really just a road that takes you over the mountain but with some nice views of the countryside, lots of sheep, etc. I think we saw one car the whole way across, going in the opposite direction (oh forgot, prior to getting there, we saw signs for the Swiss Cottage, but we didn't stop). Once over the fee, we found ourselves driving along the river in the woods - absolutely beautiful - just before arriving in LIsmore. WE took pictures outside the Lismore Castle but if I remember correctly, it's not open for visitors. We had a fun lunch in Lismore, meeting up with some characters who had just left a bar and after asking for a recommendation for lunch, they ended up eating with us at the place they suggested. Cute little town. The pair we ate lunch with suggested that we go to The Towers but it would have meant backtracking - it was on the route we came in on from the scenic V road, but prior to getting to Lismore Castle. Unfortunately we didn't have time to go back, but it is one of my regrets as it sounded very interesting.

After Lismore, we essentially just headed straight to Kinsale, not stopping in Cork. While the drive itself without stops would have been about four hours, with all of our stops, we didn't arrive in Kinsale until about 6pm.

Of course, you may have completely different interests in what you want to see, but we were going to see much of the coastal areas later in our trip, so it was wonderful to see some of the interior towns, especially those that aren't on the typical tourist path. We were able to stop in Cashel (I assume that's what you meant by #3?) later on in our trip on our way from Killarney back to Dublin. It was also well worth a stop.

I'm not sure how to add in a link but hopefully you can cut and paste this into your browser to see the route we took using Google Maps.

Good suggestion, but that is The Vee, not the fee. And you should really go have a look at the Towers!

Thought the suggestion to go via Waterford (on the motorway?N25 is a good one too, nice scenery even on a main road.

Haha, think that was my autocorrect at work...I know I typed vee so went back to look at my post and noticed some places it says vee, V and fee! I was typing "vee" but didn't notice my computer changed it in several places!

My friend messaged me that she was going out to pick cephalopods. Turns out she meant crabapples. Yep, autocorrect at work.
