Yes, catch one of the many trains from the airport station for the 20 minute trip to Piccadilly Station. Your hotel is a few minutes walk from the station's main entrance.
The tram doesn't go to The Trafford Centre yet, but you can catch an Altrincham tram from Piccadilly Station to Stretford and continue to The Trafford Centre on The ML1 shuttle bus. You purchase a combined ticket from one of the ticket machines on the metro station at Piccadilly Station.
Piccadilly Gardens bus station is a 5 minute walk from the rail station and your hotel. The 250 and X50 (express) buses leave from the same stop in the bus station to The Trafford Centre, they call at Old Trafford en route. The buses are quite frequent, a daysaver ticket bus ticket would cost you £4.00.

Yes the best way to get to Trafford Center is by bus from piccadilly gardens, they are really frequent!

You might want to consider a trip over to Liverpool. Only 40 mins on the express train which costs £11.60 return, and plenty of shops, especially in the new(ish) Liverpool One shopping area.

Back in Manchester you will find some alternative/vintage clothes shops, record/music shops etc in the Northern Quarter, along with many interesting bars, cafes and restaurants.
I will be there for 5 days I was in Liverpool last year and not pushed to return... I had been recommendedblackpool for the walk down the pier and the pleasure beach... Thanks for your suggestions
King Street and The Avenue for high end shopping.
Kendals (house of fraser), Harvey Nichols, Selfridges for good department stores.
As already suggested, the Northern Quarter for independent shops, bars and restaurants.
Does anyone know how long the tram and bus combo takes?
According to stage coach the x50 takes about 30mins so thinking that may be quickest option?
