Your best bet would be to keep an eye on Night & Day on Oldham Street. It isn't particaurly near Deansgate (a 25 minute walk or so from the Hilton, depending on how fast you walk - you could always get a cab), but it is absolutely wonderful in every way.
I can't think of anywhere better, to be honest.
The Thirsty Scholar by Oxford Road station often has live bands.
Check their website for listings.
Quite a few pubs in the Northern Quarter have live music. Night and Day is just one. There is also Band on the Wall, Castle Hotel and Gullivers, for example. There is regular Jazz at Matt and Phred's too. Nothing around Deansgate though. And it's only 10 minutes walk to the Northern Quarter from the Hilton, not 25! Our city centre is very small.
