Elusive Sunday trading - Bistrot/restaurants

We're arriving in Paris on a Sunday afternoon in July for 3 nights stay at an appartement in the 2e arrondissement. Seems like all the bistrot and restaurants I look at are closed either Saturday and/or Sunday dinner and many on Monday. We wanted to avoid the "Tourist" restaurants and opt for traditional French cuisine (any region).

Will it really be so hard to find something?

No, you will not starve to death on the weekend in Paris. That said, the 2nd is primarily a business/commercial district so many of the restos will indeed be closed, though not all. Walk a short distance east into the 4th and you will find plenty of places to eat on a Sunday, as you will in the 11th — and the 6th and 5th though those tend more to the "touristy." But not by any means all the restos even in the 5th and 6th deserve that label.
