I collect these knives and wonder if there is a particularly good knife shop in Paris?

There are specialty shops for knives all over Paris. If you're talking about chef/kitchen knives, I know they carry them at E. Dehillerin and the kitchenware shops (A. Simon, etc.) on rue Montmartre, and they probably have them at BHV (all styles).

However, you should price shop online before leaving home, as many things are pricier in Paris (especially with the exchange rate right now).

As a collector you probably already know the name Calmels.

Unfortunately, Calmels only sells from their aging shop in Laguiole. Todays folding Laguiole knife was invented by Jacques Calmels, so there is a rich history with this brand name.

There was an interesting program on French M6 television last Sunday 23 August about Laguiole knives. Most of the cheaper ones are now made in Pakistan, and it showed you how shops in France are actually selling the Pakistan made knives as the genuine article.
