Train travel to Germany from Greece?

hi--for years, I have loved the seat61 website. Next summer, we will have a chance to try one of the trips described. Have always wanted to take the Orient Express, but, at $8000 per person it just won't happen (unless we win the lottery). But, a poor man's version is described on the seat61 website. Which way would you travel? Where would you stop off? The two options below would take about 3 nights travel if done directly, but, we can stop off on a few places along the way.

Option 1: Thessaloniki, Sofia, Ruse, Bucharest, Brasov, Sighisoana, Budapest, Vienna, Linz, Frankfurt

Option 2: Thessaloniki, Skopje, Belgrade, Budapest, Vienna, Linz, Frankfurt

We will be spending a week in Northern Greece and visiting friends in Mainz (near Frankfurt)--have 7-10 days in between in late May/early June to do this train trip.
