Proper casual dress in Central Europe

We are travelling to Germany/Poland/Czech Republic in July and are in our 50's. We don't need to be "hip" but are just trying not to look like obvious American tourists. Without trying too hard, what is reasonable dress for sightseeing, eating at casual restaurants.

A backpack is an essential item, wherever you come from, wherever you travel. Where else can you stow the layers of clothing you have to strip off when a cool morning turns into a hot afternoon?

Don't know if this fits into this thread but I can usually tell Brits abroad because of the shoes. Not one type of shoe particularly but I think we have different styles.

I think this Wendy Kitsteiner needs to get over herself. Doesn't she know that trying to look cool by stereotyping your fellow countrymen on vacation is so over? I mean really. I cannot remember the last time I saw someone in the US with a fanny pack who wasn't a runner. And the picture of the frumpy middle-aged couple as the example? Chubby middle-aged couples tend to look frumpy, regardless of country of origin. It's time for some new material people.
