Are there any castle hotels in or near Trier? or similar landmark old hotels? We hope to travel there with our family for a week between Christmas and new years

lots of castles in the are have little cafes but not many have hotels.

I heard that there is a nice one up near Koblenz that you might want to check out.

Close to Trier in Echternach, Luxembourg the city rents lovely apartments in the old town wall towers, definitely the most interesting accommodations I had in all of Europe. I believe we were in Tower #3. The ground floor was a kitchen eating area. The next floor up a master bedroom. The next up a bedroom and also a bathroo,. The next up was the living area with all modern appliances. It gave the only access to portions of the town wall on either side. Just a lovely place to have coffee in the morning and look pout from the picture window to the morning fog across the river in Germany. Then there was also a king-size bed in a loft. I can't recommend this place enough!!!! and in a lovely town, the oldest in Luxembourg.
