Kindly correction Benny, there are trains from Valencia to Barcelona, the Euromed, following the coastline. It makes no sense at all to go via Madrid! The Euromed takes roughly 3 hours from Valencia to Barcelona. There are many trains per day and very comfortable (very similar to AVE trains, only not as fast)
Preston, both cities are equally easy it to get to/from Valencia, Madrid takes 1:30h, Barcelona 3h, prices depends on the train fare you get. There are so many things to see and do in both. It really depends on you and your own tastes! Get information online about both Madrid and Barcelona (the FAQ here in TA about each city are a god start) and choose the one you fancy more.
Thanks so much all. I think we are going to choose Madrid for this trip. The air schedules work better for us. I have traveled the world but this is my 1st trip to your country and look so forward to it. We will have about 48 hours in Madrid. Anything we must see?
