A short visit to Valencia is certainly recommended but be warned, you will be back for a longer stay.
Madrid Barcelona and Valencia are Spain's 3 largest cities and you really need much more time to appreciate more of what they have to offer.
Your short stay will give you a good introduction for a future longer visit .
Definitely see Valencia. See the aquarium at the City of Arts and Sciences. I have seen it 3 times already and never tire seeing it. It is the best aquarium in Spain.

yes valencia is a beautiful city, with lots to see and do. The state of the art science museum and aquarium is great.
If you decide to go to Valencia I would concentrate on seeing the historic centre as it's compact and easy to see the main sights in a short period of time. You could spend a day or more at the City of Arts and Sciences and see little of the city itself. It is also in easy reach of the train stations.
