Hotel that caters for coeliacs

I'm looking for a good 3/4 star hotel that caters for coeliacs and can speak English very well also want to be central too

Caters in what way? Most don't have restaurants - so, what is it you are looking for with this question?

If they offer breakfast, it can range from some very simple bread items with coffee to a spread with cheeses, meats, juices, yogurts, fruits and cakes/bread items.

Maybe if you could clarify what you are wanting, it will help people offer useful suggestions.

The hotel star system in Italy does not connote quality; it relates to amenities offered so you can find some 3 star hotels that are nicer than 4 star hotels - so read reviews very carefully for issues that are important to you

As regards hotels that "can speak English very well", this depends on what staff they have at the time: and as wait-staff, cleaning staff, etc. are not permanent, I doubt that anyone can guarantee that every member of staff at the hotel you select will be able to speak English to the standard you require. At the same time, it is unlikely that Reception staff at any decent hotel would not speak enough English to be able to deal with English-speaking guests.

A large number of restaurants in Rome will have English-speaking staff. But you may want to Google "gluten-free dining in Rome" and see what pops up. I believe more and more restaurants are starting to provide gluten-free options.
