Where to stay in and around Trapani Province?

Greetings everyone! Looking for a hotel recommendation for a couple in their early 70's in Western Sicily the first week of November, 4-star quality, budget is very flexible (up to 250 euros a night is fine). They will have a driver during the day for day trips but at night the couple won't have a car, so ideally a place that offers very good dinners or walking distance/taxi to town. They will have already seen other towns from Palermo through Agrigento (making the loop through the Eastern side of Sicily), so we're looking for a 2 nights stay somewhere special, calm, relaxing in and around Marsala/Trapani/Erice or even Scopello or the nearby countryside. Keep in mind the time of year and potential weather, would like to avoid a big empty hotel or gloomy winter beach. This will be the end to a 3 week trip through Italy. Thank you so much for your help, I hope to return the favor!

Consider Marsala with its active wine trade.

Scopello is a mere hamlet and very quiet in November.

Erice is a tourist destination, busier by day with day trippers, but quieter at night.

Trapani is a small city, and a possible consider, although you might not find the type of accommodation you'd like.

The star rating for hotels in Italy is an indication of amenities and not quality, so it becomes important to read reviews with a critical eye to determine which accommodation offers the amenities that are important to you.

Hotels earns those star ratings for position, services like room service or a night porter, lift, swimming pool, or frequency of towel change.

Hotel Carmine is lovely in Marsala's historic centre.

I second Vagabonda's suggestion of Hotel Carmine. Stayed there in June and thoroughly enjoyed the hotel and found it convenient for touring Marsala's historic district. Ask for a room with a terrace overlooking the garden.
