To most of us, the determining factor for going up a mountain peak is visibility, which is another term for weather. Yet for some people near zero visibility is romantic. To catch the moment the advice is to stay close to the mountain, not 2 or 3 hours away. When your itinerary is subjected to weather, you should have a plan B.
Hard to decide between Titlis, Rigi and Pilatus as they are all great, but different:
Mt. Titlis is the highest peak of the three, with a glacier on the top. If you like to touch snow, then you need to go there. It's surrounded by endless other mountain peaks which can be seen from there.
Mt. Rigi is the lowest. There is a wide choice of hiking trails - so pick that one if you like hiking. The view is great - lake of Lucerne, the higher mountains as well as the lowland can be seen from there.
Mt. Pilatus is close to Rigi and therefore the view is comparable. But it's more rocky and not very ideal for hiking.
If you have time enough, I recommend to go up to Mt. Titlis and either Rigi or Pilatus.
I don't recommend to visit Jungfrau region from Zurich - the journey is just too long (4.5 hours to Jungfraujoch). If you have only one full day, then you better spend it with sightseeing and shopping in Zurich itself. Or do a lake cruise to Rapperswil. Anyway you probably will have seen enough mountains after your stay in Lucerne and it would get a little repetitive!
