Weather and Hotel Reservations.

I understand that trips to mountain regions should be kept flexible, to avoid cloudy weather. Now, that would require making the hotel reservation right at the end. Is that generally possible/OK, or do hotels get all booked up in the high-season (July-end)?

Yes hotels do get booked up the end of July is school holiday season in parts of Europe. Why not plan two itineraries one for good weather and the other for bad weather after you have booked an hotel. I'm in the process of doing this now and having fun doing it.
