Firstly, unless you were planning trips away from the direct route, there is only one route by train from Paris to Amsterdam, which goes Paris-Brussels-Antwerp-Amsterdam. Secondly, although all things are relative, I would not call any section of this route "scenic"! For scenic train rides you would have to go to the Alps, or maybe down the Rhine.
You can do the whole of the trip from Paris to Amsterdam by high-speed Thalys (www.thalys.com), which is the ONLY train available as far as Brussels (1h22); beyond Brussels you can take non-high-speed InterCity trains to Amsterdam (3 hrs instead of 2 by Thalys), but slower does mean "more scenic" (unless, perhaps, you consider railway stations as scenic).Edited: 18 April 2012, 14:41
P.S. I should perhaps add for the sake of completion that there is another train to Brussels from the Paris area, which is the TGV from Paris-CDG Airport. That route is a little bit more scenic (mostly at the beginning, between CDG and Lille) than the route from Paris-Nord; though still not so picturesque as to make you reach for your camera, in my opinion.

i agrre with gaminari, the fast routes are built for speed not the view you would have to look at deviation from the most direct route to be somethi8ng better. Look at the ttraqin thread and man in seat 61 to see if that can help
