The language spoken is portuguese... The dialect that the old people used to comunicated among them is basically extinct (a mix of portuguese and spanish). If you want to listen to a similar dialect go to Miranda do Douro, there they are trying to preserve it and maybe you can find someone that can direct you to those that are doing it. pt.wikipedia.org/wiki/L%C3%ADngua_mirandesa

Which day would that be? On Friday there's a bus from Bragança to Miranda do Douro: http://www.rodonorte.pt/ From there it's a short 15 min. taxi drive.
