Thinking of visiting Amsterdam with toddler

My husband and I want to plan a trip towards end of April this year with our daughter who will be 18 months then. I really want to visit Amsterdam and Bruge but am very apprehensive regarding jet lag and travel along with a toddler. We just want it to be a relaxing time, specially since we have to consider my daughter's schedule. Not sure how she will cope up with jet lag.

We want to be in Amsterdam for maybe 3 nights and Bruge a night or two. Would it be wise to fly out of Brussels back home to Chicago? In that case, should we spend a night in Brussels?

Please also suggest things to do - we are more interested in enjoying the city, not so much of art or museums. Maybe one museum if possible, so which museum is a must see? We would like to take the boat tours, sit at cafe, grab a beer, visit parks for our daughter.
