Everything is not closed. Most shops are closed on Sundays (convenience stores and kiosks are open), but bars, restaurants, fast food places, pubs, coffee bars etc are more or less all open. Opening hours will vary, but it's won't be hard to find a place.

In what part of town will you be staying? That would help us make sure you don't get directed to somewhere farther away than a comfortable walk. That said, the Dubliner (down by the old city hall) is a wonderful old place, and pretty friendly by Oslo standards(http://www.dubliner.no/). Another good choice is Forest and Brown in Frogner...a neighborhood kind of pub, but friendly and pleasant (http://www.forestandbrown.no/).
