Jerez is inland and quite far from beaches. You would have to go to Cadiz to be by the beach.

In Jerez, a good hotel is the Tryp.

Seeing that you are in UK presume you using the Ryanair flight so do not arrive into Jerez until 8.30 pm and the last bus from outside the terminal building leaves at 8.45pm to Jerez itself. The journey is not too long and you arrive at Jerez bus station which is next to the railway station.

In view of the time it could be a good idea to make Jerez your base for the first night at least ? There are different ranges of hotels and some within walking distance of the bus/train station. Depends on your budget. As far as 'all inclusive' is concerned -I don't think this is very popular in Jerez. And of course you are not next to any beach. Jerez is a really nice town with plenty of shopping in the centre, and just of the western fringe you have IKEA and AREASUR http://www.areasur.es/centrocomercial.php that has plenty of shops and places to eat.

If you want beach then think of travelling further afield. Cadiz is very popular in July and August and has a stunning long sandy beach. very popular with Spanish families and many own or rent apartments in this city during these months. hence finding some accommodation in Cadiz is going to be potentially difficult.

Down the coast is another popular seaside beach called LA BARROSA (Chiclana) and a little further is Novo Sancti Petri which does have some large hotels that have great seaside positions and large swimming pools and usually full buffet catering but you need to find a 'deal'. I am thinking of Iberostar Royal Andalus but there are others - just look for Novo Sancti Petri.

And then further south is the seaside town of Conil which has a number of places right on the beach and others set back. I am thinking of Conil Park hotel which is close to the town and the beach. Or the Fuerte.

But you can find cheaper hotels in the town.

Reaching these places by bus (or in the case of Cadiz by train as well) is possible but during the day time. If you wanted to take a taxi from the airport then reaching Conil could cost €60 or 70 thereabouts and take an hour.

The beaches of cadiz Bay itself do have some attraction. For example the one at Valdelagrana (El Puerto de Santa maria) has plenty of places to eat but is mainly apartments. There is one hotel called Puerto Bahia which is basic but could suit. http://www.hotelpuertobahia.com/

or in El Puerto de Santa Maria town itself you have a number of places and you can always reach the beaches by either a walk or using the local buses. http://www.turismoelpuerto.com/ - you can get hotels and other information on the town's web site. El Puerto is closer to Jerez airport and a taxi should not cost more than say €25 or thereabouts.

I think that it bears mentioning that although Jerez is not a beach destination, it is only 10 km from the beaches of Puerto, 24 km from the beaches of Rota, and 30 km from the beaches of Cadiz. Sure it is inland, but very doable with public transport and in terms of accommodation Jerez is in general cheaper than the beach destinations mentioned here.
