Best way is train. You get off the ship in Circular Quay and walk about 200 to 300 metres to the Circular Quay railway station (you'll see and hear it, it runs overhead as you look back fro the water towards the city). The train goes direct from there to the airport. Easy, fairly cheap and very quick, about 15 mins.
