Do the Kuranda trip the other way around... train up and skyrail down. There are only two trains up in the morning, and two down in the afternoon. LOTS of the cable cars going all the time, so it would be easier coming down on the skyrail.
Hartley's Crocodile Farm is another option. You would want to get there right at opening so you get to see most everything. It is further north though, about ten minutes further north than Palm Cove. The skyrail station is much closer to the airport, so that might be better... stay closer to Cairns so there is no chance of missing that flight.
Couple of other alternatives apart from Kuranda train and Skyrail would be to wander around the Flecker Botanical Gardens and Centenary Lakes. It's close to the city and even closer to the airport.
It's a must see if you love tropical gardens. You can sit and have a coffee or lunch at the cafe inside the gardens as well.
Also you can wander along The Esplanade and have a swim in the Lagoon, do a bit of last minute souvenir shopping or wander into a couple of galleries that are all walking distance from the Lagoon/city.
