Check out Bread Top, www.breadtop.com.au, there where more than one outlet in the city. They have a large selection of both sweet and savory pastries. You walk in and and help yourself to the large selection all around the store.

These are ok, but a bit 'chain-storey'. For something a bit more artisan you could try:

CBD

Gill's Diner and Bakery in Little Collins

Pastries, croissants, breads

apartmentalkira.com.au/2009/…

Hardware Societe

They do great cakes and biscuits, macaroons and their own spanish donuts (not bread or pastries tho)

urbanspoon.com/r/71/1474868/restaurant/Victo…

Hopetoun Tea Rooms

Great cakes and slices

…wordpress.com/2011/…

Out of CBD but still inner city

Dench Bakery

Fitzroy North. Yum.

http://www.denchbakers.com.au/

Baker D Chirico

St Kilda. Yum again.

Hope you find something there to your liking :_)

Have fun.

Brunetti's is good, but it's always busy with a queue for coffee/cakes, & tables.

Laurent is now a chain of stores, but they do have a fantastic selection of cakes.

There are a lot of cafes in Melbourne's laneways, especially between Swanston & Elizabeth & Bourke & Collins (& down to Flinders). If you have the time to wander through them, stop at any which appeal to you. Some of my best food experiences when travelling have been from places I've 'discovered'.

Another vote for Laurent. Can't go past it for my money. Cakes are excellent & great coffee too.

Brunetti's is good, but as ellenwillow mentioned, the queueing does my head in and it's just my opinion, but whilst the coffee is excellent, the cakes aren't quite worth the wait. But then I am biased toward Laurent.
