Free form travel - October?

We've just started research on a 3 week trip that will occur in October of 2014. We are thinking one week on the NI and two weeks on the SI. Rather than develop a specific itinerary, we are wondering if a more free-form type of travel might be OK that time of year. I'd rather just book the first couple of nights along with a rental car, then travel in a more spontaneous fashion, while watching the weather and staying here and there. We would start on the NI around Oct. 10 for about a week, then head to SI in the hopes of trending toward better weather later in the month. Seems that kids will be back in school, and lodging not too crowded. What advise might you have about this approach. Thanks!
