Wenceslas Square - cheese stall

I was wondering If anyone knows the name of the cheese they sell from the stall at Wenceslas Square? It was the stall at the top end (outside mcdonalds) it's hot, smoked cheese served on bread.

I first tasted this in Poland years ago it was cooked in 'pleat shapes' and still haven't managed to track it down here in the UK. It has the texture of smoked houlimi but I assume it's european rather than Cypriot. We have a few Czech and Polish shops cropping up here so thought I may be able to pick it up fro there if I knew what to ask for.

Any suggestions would be very much appreciated. Thankyou.

Just a guess, I have never noticed the stall at Wenceslas Square...

They are Slovak, and are called 'Korbaciky' - they are originally from the Orava/Tatra region I have seen them in a Polish shop in Manchester, but they are little known in Poland outside the Goral region (around Zakopane), which borders on the aforementioned.

There is also this cheese http://en.wikipedia.org/wiki/Oscypek which is identical in taste and texture, but is in a different form. If you ever go to Zakopane you will see them selling these things by the thousand by the side of the road.
