do i get a first or second class ticket?

3 hour ride

does second class have room for our baggage?

am no snob--but am 70 years old and dont want to be smushed in!!!!

dont care about fancy food or fancy seats....

TLK or EIC trains all have seat reservations for both 2nd and 1st class seats. In 1st class you will have slightly more place for your luggage but I think you will be fine in both classes (unless you are planning to take some incredible number of suitcases, bags etc...). Usually there is enough space for one suitcase per person, sometimes more if you happen to travel with people who have only hand luggage. It's just a 3-4 hrs ride (beware of trains that take longer!) so I would take 2nd class in EIC or 2nd/1st class in TLK.

The standard of trains often depends on the destinantion. Trains to Krakow for instance are usually in a better shape than those to provinacial towns. You will find enough space for luggage also in 2nd class, no matter where you are going.

There is no such thing as a RailEurope train. RailEurope is a ticket seller.

The two main train operating companies in Poland are PKP InterCity, and Przewozy Regionalne. There are also a number of local operators in various regions.

Most trains between Warsaw and Krakow are operated by PKP InterCity, with a few each day operated by Przewozy Regionalne.

I agree, you'll be fine in 2nd class as there is not that much difference actually. However, 1st class is not that much more expensive either, maybe 50% more so for a TLK train (this means paying 10$ more) and 30% more for an EIC train. There is no food served in either class but most (some?) trains have a restaurant car. I think on EIC train you get a complimentary tee/coffee, but I am not 100% sure about that.
